Strawberry and Feta Goat Cheese Salad Recipe

During the broadcast of Friday’s Lisa Wexler Show, I had the pleasure of meeting Frank, from family-owned Goats & Gourmets, a new vendor at the Ridge Hill Farmer’s Market. I was immediately impressed by the super fresh goat cheese created at the farmstead, especially with some of the flavor combinations they offer. I picked up a small tub of their creamy apricot and honey goat cheese (a perfect spread for your favorite cracker) and the Greek feta, a combination of fresh feta goat cheese, Greek dressing, green olives and sweet onion. The latter (which turned out to be my favorite) is in the inspiration behind the simple salad I served last night for dinner. To make it easy, you can certainly pick up the Goats & Gourmet version at Ridge Hill this Friday. Or, you can certainly mimic their version on your own.

Strawberry and Feta Goat Cheese Salad

  • 1 pint of Goats & Gourmets Feta Goat Cheese*
  • 3 cups of sliced strawberries

*Substitute recipe for the Feta Goat Cheese Salad

  • 1-1/2 cups of your favorite goat cheese, cubed
  • 1/4 cup of your favorite Greek dressing (I’m partial to the homemade version from Lefteris Gyro)
  • 1/2 cup of green olives, sliced
  • (Optional: Reserve a tablespoon of the juice to add to the Greek Dressing for added saltiness)
  • 1/2 cup of sweet onion, diced

1. Combine all of the ingredients in a bowl and serve!
