We’re taking a quick break from the IntoxiKate test kitchen, and met Sandra Spiro (FlashPepper.com and the Pepper Pak) in her Westchester kitchen to check out the iSi Gourmet Whip with local pastry chef Samantha Eichenberg, aka “The Dessertist.”
While the iSi Gourmet Whip has a range of uses (think everything from light and fluffy Espumas, to warm and cold sauces and whipped soups), we thought we’d put it’s whipped cream making to the test. The Dessertist (known for her Desserts After Dark series recently demo’d at the Greenwich Wine + Food Festival this past weekend), combined 2 cups of heavy cream, 1/4 cup powdered sugar, and 1 tsp vanilla and added the mixture to the whipper.
