While I’m pretty on top of regional cuisines in the savory field, I’ve got to educate myself a bit more in the sweet realm. And I’m going to start with calissons! This French candy has two layers—a chewy, fruit and almond blend topped with royal French icing. Rachel Dana, owner of Dana Confections, puts her own twist on this traditional sweet, and is one of a handful of confectioners who offer calissons in the US. Plus, she sources most of her ingredients locally, ensuring the freshest ingredients are used to create her array of sweets.
