Last week, things got a little uncharacteristically emotional on Fork This with IntoxiKate. Guests Judy Vig and Joy Paoletti (aka Judy & Joy), identical twins who are self-taught Italian American cooks and cookbook authors, popped on the show to promote a campaign near and dear to their hearts—Breast Cancer Awareness. The duo has a unique approach to cooking and life—Judy recently celebrated her third year of being a breast cancer survivor—and their recipes are created two ways: traditionally, and with a twist. The ‘traditional’ way is prepared by Joy and the ‘healthy’ twist created by Judy.
I immediately fell in love with the two of them {check out the interview below}, but want to support their message: October is breast cancer awareness month and women need to get an annual mammogram.
Both of their experiences—Judy, as a patient, and Joy, playing nurse to a sister fighting breast cancer—evolved these women into advocates for healthy living, encouraging women to teach their families how to make better food choices. The ladies are also currently pursuing a certification in health and wellness.
I love them so much, I asked them to pass along one of their recipes, and this Baked Apples with Olive Oil Crumble recipe looks and sounds nothing short of amazing. Can’t wait to make it after my weekend of apple picking!
