Baked Apples Recipe from Judy & Joy

judy & joyLast week, things got a little uncharacteristically emotional on Fork This with IntoxiKate. Guests Judy Vig and Joy Paoletti (aka Judy & Joy), identical twins who are self-taught Italian American cooks and cookbook authors, popped on the show to promote a campaign near and dear to their hearts—Breast Cancer Awareness. The duo has a unique approach to cooking and life—Judy recently celebrated her third year of being a breast cancer survivor—and their recipes are created two ways: traditionally, and with a twist. The ‘traditional’ way is prepared by Joy and the ‘healthy’ twist created by Judy. 

I immediately fell in love with the two of them {check out the interview below}, but want to support their message: October is breast cancer awareness month and women need to get an annual mammogram.

Both of their experiences—Judy, as a patient, and Joy, playing nurse to a sister fighting breast cancer—evolved these women into advocates for healthy living, encouraging women to teach their families how to make better food choices. The ladies are also currently pursuing a certification in health and wellness.

I love them so much, I asked them to pass along one of their recipes, and this Baked Apples with Olive Oil Crumble recipe looks and sounds nothing short of amazing. Can’t wait to make it after my weekend of apple picking!

Product Testing: Watch Us Whip with iSi Gourmet Whip and The Dessertist

 We’re taking a quick break from the IntoxiKate test kitchen, and met Sandra Spiro (FlashPepper.com and the Pepper Pak) in her Westchester kitchen to check out the iSi Gourmet Whip with local pastry chef Samantha Eichenberg, aka “The Dessertist.”
While the iSi Gourmet Whip has a range of uses (think everything from light and fluffy Espumas, to warm and cold sauces and whipped soups), we thought we’d put it’s whipped cream making to the test. The Dessertist (known for her Desserts After Dark series recently demo’d at the Greenwich Wine + Food Festival this past weekend), combined 2 cups of heavy cream, 1/4 cup powdered sugar, and 1 tsp vanilla and added the mixture to the whipper. When’s the last time you ordered Chinese food? I’m willing to bet what happened next: you made a crack about the meat, inhaled your food anyways, immediately felt drowsy, and then served as a “bloatation” device, floating your way through your post-meal MSG hangover.

You’re smiling because you know I’m right.

Why do we go back for more, fighting with the chopsticks to pick up those final, soy-sauce drenched pieces of white rice? We can’t get enough of the beef and broccoli, slurping up the egg drop soup, and the grand finale—a small piece of paper detailing our fortune popping out of a cookie. I am 100% guilty as charged, ordering Chinese at least three times per month.

Enter WUJI: Scarsdale village’s newest eatery, offering a farm-to-wok dining experience. The same great flavors we love, but produced plates by true Hong Kong chefs with organic, fresh ingredients.

Chinese food that’s organic. There’s something you didn’t think you’d see in the same sentence.

Beer lovers, unite! Big Brew NY is back at the Westchester County Center in White Plains September 19th from 4 to 8 p.m. Over 200 craft beers, including seasonal pumpkin varieties, will be on tap. Sponsors include 1490 WGCH, The Oath Craft Beer Sanctuary (Tarrytown), The Craftsman Ale House (Harrison), and DeCicco & Sons.
