Chef François Kwaku-Dongo Brings a Fresh Culinary Approach To New Canaan’s Roger Sherman Inn

by Katie Schlientz November 7, 2017
written by Katie Schlientz
Chef Francois Kwaku-Dongo

Historic Inn and Gathering Place Now Offers Seasonally Inspired Menus, Catered Affairs, Fine Dining, Casual Tavern Fare, Libations, and Even a Chocolate Menu!

November 7, 2017, New Canaan, CT: Celebrated Chef Francois Kwaku-Dongo spearheads the reinvention of the Roger Sherman Inn, a historic landmark in New Canaan for nearly a decade. The stunning New England restaurant and 17-room Inn will undergo a significant culinary transformation as it remakes itself for the 21st century.

Chef Kwaku-Dongo is introducing a seasonally-inspired menu, showcasing fresh, locally-procured ingredients. The menu is a culinary tour of New England, its coastal seafood, local family farms, and talented artisans. Using these East Coast ingredients as the foundation for quality and flavor, Chef Kwaku-Dongo applies techniques honed in some of the most demanding kitchens in the country.

Handpicked by famed Chef Wolfgang Puck to cook in his highly acclaimed California restaurants; Chinois on Main, Granita, and Postrio, Chef Kwaku-Dongo was elevated to Executive Chef at the iconic Spago in West Hollywood where Chef Puck’s innovative open kitchen concept was all the rage and Chef Kwaku-Dongo was the star of the show in a city consumed with entertainment.   Chef Kwaku-Dongo  went on to open Spago Chicago where he oversaw the development of Wolfgang Puck Catering and Events, a division of Puck’s expanding empire whose clients included Harpo Entertainment and Goldman-Sachs, among others. In 2005 he journeyed to Greenwich, CT to lead a team on the rejuvenation of L’ Escale restaurant on Greenwich Harbor with his inspired land and sea menu. He then went on to open the boutique hotel and restaurant, The J House Greenwich and Eleven-14 Kitchen where he created his Chocolate Lab, a pastry and gelato shop featuring hand-crafted chocolate desserts using Omanhene chocolate produced entirely in Ghana.  Chef Kwaku-Dongo serves as the Culinary Director for the Omanhene Cocoa Bean Company, the first company to sustain exports of bean-to-bar, single-origin chocolate produced exclusively in Africa. These chocolate masterpieces can now be enjoyed at the Roger Sherman Inn.

The lunch, dinner, tavern, and Sunday brunch menus are comprised of from-scratch recipes which run the gamut from comforting tavern fare to more refined dishes, including; House Cured Smoked Salmon; Grilled Octopus with chorizo vin, olives, and fingerling potatoes; Woodbridge Farm Oxtail Raviolo with sun-dried tomato and rosemary jus; Roasted Bronzini with salsa verde, roasted fennel, and fregola; and -Truelove Farms Grilled Pork Chop with braised red cabbage, apples, pancetta, and red wine jus. Tavern favorites and bar bites consist of; Lump Crab Cakes with roasted pepper aioli; RS Lobster “Club” Sandwich layered with walnut bread, rocket, tomato and bacon; USDA Prime Black Angus Beef Mini Burgers with Vermont cheddar, shallot marmalade, garlic aioli, and hand-cut fries; artisanal cheese and charcuterie; and Tuscan Kale tossed with chicory, pecorino, walnuts, in a lemon yogurt dressing. Sunday Brunch is made special with organic Eggs Benedict with smoked salmon, tomato confit, and hollandaise sauce, and decadent Brioche French Toast topped with stewed apples and vanilla mascarpone.

In the kitchen with Chef Kwaku-Dongo is Chef Adam Truelove, his protégé from Eleven-14 Kitchen and a masterful chef in his own right. Chef Truelove, a graduate of New York’s esteemed French Culinary Institute, made his culinary inroads while cooking at such high profile New York eateries as; Esca Restaurant under the tutelage of Chef David Pasternak; and Chef Geoffrey Zakarian’s Town Restaurant. Fairfield and Westchester County residents have been enjoying Chef Truelove’s inspired dishes when he cooked at such popular restaurants as Mario Batali and Joe Bastianich’s Tarry Lodge with Chef Andy Nusser; Ramze Zakka’s Sole with Chef Albert DeAngelis; and while theExecutive Chef of Napa & Company.

With a talented team at the helm and a fresh approach, guests of the new Roger Sherman Inn have much to look forward to. The Roger Sherman “Unplugged” series will continue to showcase live music by local artists in the Tavern, in addition to seasonal events, wine dinners, and visits from special guest chefs, farmers, and artisans. Craft cocktails and local brews are offered, and an accessible and global wine list is being newly curated.

Stunning catered events, weddings, and milestone celebrations are made all the more special under this quintessential New England setting with the addition of Chef Kwaku-Dongo’s new menu, gifted team, and forward-thinking vision.

Food Bank for Westchester Kicks Off 2nd Annual “Feed a Family” Campaign

by Katie Schlientz November 1, 2017
written by Katie Schlientz
food bank for westchester

Local Community is Encouraged to Help Provide 2,000 Holiday Meals to Feed Families this Holiday Season Now Through December 31

WHITE PLAINS, N.Y. (November 1, 2017) – As the temperatures continue to drop and the holiday season comes knocking on our doors, Food Bank for Westchester has launched its 2nd annual “Feed a Family” campaign, which calls on the community to help feed their neighbors who are hungry. As part of this campaign, a press conference was held in White Plains today to encourage the community to participate in the initiative. One donation of $25 will buy a holiday meal for a family and the campaign’s goal is to provide 2,000 holiday meals for families in need from now through December 31.

Last year, Food Bank for Westchester re-invented its annual turkey distributions for Thanksgiving and launched this campaign to help residents during the entire holiday season.  Today’s announcement took place at White Plains Public Library, one of Food Bank for Westchester’s mobile food pantry sites.

“The feeling of running on empty is a reality for one in five of our Westchester residents. We need to make sure that no child, adult or senior in the county ever runs on empty, so for November through December, we are asking everyone to come together to help end hunger,” said Leslie Gordon, President and CEO of Food Bank for Westchester. “Everyone deserves a nutritious meal this holiday season, and together with the community’s support, we can help ‘feed families.’”

Westchester County Executive Robert P. Astorino, State Senator Andrea Stewart-Cousins and White Plains Mayor Tom Roach joined Gordon at the event today with community supporters and representatives from partner agencies. They all joined in handing out turkeys, chickens and other holiday meal ingredients to more than 100 individuals in need.

“The holidays can be an especially difficult time for those who struggle to put enough food on the table,” Astorino said. “But together, we can and will make sure families have an opportunity to gather around a holiday meal and create lasting memories.”

The Food Bank for Westchester operates the county’s largest food collection and emergency distribution network, helping to feed and supply for its 300 front line hunger-relief programs throughout Westchester which include food pantries, soup kitchens, and shelters. According to Gordon, no contribution is too small for the “Feed a Family” campaign. Local residents, business leaders and organizations can come together to donate, whether it’s $25 to feed one household or family, or $500 to feed 20 households or families.

The following provides ways for everyone to help their neighbors who are hungry this holiday season:

Advocate, Educate, Volunteer and Donate to “Feed a Family”

Take the pledge to help feed a family for the holidays. Food Bank for Westchester is encouraging local businesses, organizations, individuals, and groups to join its “Feed a Family” campaign. The following are some ideas to get county residents started:

  • Start your own Facebook Fundraiser – have employees donate or create their own challenge amongst different departments to see who can raise the most
  • Raise awareness by hanging Feed a Family/Food Bank flyers and signage
  • Spread the word on social media by taking the “empty plate” challenge
  • Start a Food and Fund drive in the office.  Food Bank for Westchester can provide food bins and arrange for pick up.  Ask employees to donate items from our most needed items list.

Get Involved with Check-Out Hunger

Each year, select grocery stores and other food retailers throughout Westchester County participate in Check-Out Hunger®, a point of sale campaign running through December 31 that benefits over forty Feeding America Food Banks and affiliates.  The Food Bank for Westchester is proud and grateful to be a beneficiary of this campaign. Now through January, the Food Bank for Westchester invites shoppers to “Check Out Hunger” by visiting participating stores and making a donation at the cash register.

Form a Team for the Community Scoop-A-Thon

Are you a local community organization, small business, or school group? Join Food Bank for Westchester to help feed hungry neighbors this holiday season. On #GivingTuesday, a global giving movement, Food Bank for Westchester will be hosting it’s first-ever Community Scoop-A-Thon competition. This event will be an exciting and intense experience where community teams compete to pack the most food in one hour. The team that packs the most food in an hour will be deemed the “Community Scoop-a-Thon Champion” and receive tickets to Food Bank for Westchester’s Hunger Heroes Awards breakfast. Entrance fee: $100 fundraising requirement per person or $1,000 per team (up to 10 individuals).

To learn more about all of these opportunities, visit foodbankforwestchester.org.

Photo Recap: Evening in Good Taste with Food Bank for Westchester

by Katie Schlientz October 31, 2017
written by Katie Schlientz
lulu cake boutique

Last week, Food Bank for Westchester held their 27th annual An Evening of Good Taste (#EIGT2017), featuring 25 of Westchester County’s top restaurants and chefs. The organization’s fall fundraiser, which attracts hundreds of people from throughout the region, spreads the message to end hunger in Westchester County. All proceeds from the event go directly to support the Food Bank for Westchester and its children’s programs. Nearly, one-third of the 200,000 people in the county who are hungry are children.

Here’s a delicious photo recap of some of the exciting offerings presented by the area’s top chefs:

polpettina

Polpettina’s epic porchetta. Michael Abruzese served up a porchetta sandwich with watercress and roasted garlic aioli housed in onion brioche.

technique catering

Technique Catering’s “Chicago Dog” was mini but packed a punch with lots of toppings, including sport pepper, tomato, white onion, relish, dill pickle, celery salt and mustard.

abigail kirsch Abigail Kirsch serves up style every time, and this year was no different. Their savory option included ginger lime tuna tacos. The ginger lime tuna taco included a chipotle avocado mash and pineabble poblano slaw.

Abigail Kirsch’s churros with warm Mexican-style chocolate and festive toppings.

Bona Bona Ice Cream’s Food Truck was on hand, and although it was a chilly evening, I couldn’t resist the Nutella S’more sundae featuring Nick DiBona’s signature restaurant-quality ice cream-gelato crossover dessert. I mean, they torched the marshmallow topping and everything. (Note: I may have sworn slightly in this video… What can I say? I was excited!)

MP Taverna

Hello, beautiful! MP Taverna’s milk-fed veal tartare with preserve quince, Greek yogurt, fennel, pomegranate and grilled lavash was an IntoxiKate favorite!

crabtree's kittle house

Always inventive and farm-fresh, Chef Jay Lippin, of Crabtree’s Kittle House Restaurant & Inn, offered Food Bank supporters a savory “flan” with Hudson Valley corn, heirloom tomatoes, and NY state feta cheese. All. Day. Long.

lulu cake boutique

Lulu Cake Boutique’s designs are never short of amazing, but I was blown away with the detail and color on this Day of the Dead-themed cake.

In the Kitchen with Crabtree’s Kittle House Chef Jay Lippin

by Katie Schlientz October 24, 2017
written by Katie Schlientz
crabtree's kittle house

When executive chef Jay Lippin isn’t whipping up his uber-local and utterly delicious menu items in the Crabtree’s Kittle House kitchen, he may be consulting with Slow Food. Or maybe he’s at a meeting with the Chef’s Alliance. He could also be working with Food Bank for Westchester on An Evening in Good Taste, or even brainstorming with them on upcoming initiatives with their food waste program. With the Hudson Valley Seed Library Kitchen Cultivars program, Lippin helps reduce food waste with a non-profit organization that harvests seeds to preserve heirloom seed varieties.

Or, he could be driving north along the Hudson Line, meeting a local farmer at a train station to pick up crates of deseeded Bridge to Paris peppers. That farmer uses the seeds to cultivate amazing plants for next year’s harvest, while Lippin scores an ingredient that needs less prep time in the kitchen.

crabtree's kittle house

It’s all a commitment to “farm to table,” which in it’s truest state, is a symbiotic relationship. Lippin serves locally sourced ingredients in elevated ways in this elegant restaurant and inn, and in his “off” time, continues the conversation about sustainability, food waste, and supporting Hudson Valley farmers. It’s organic, it’s cyclical, and it’s his way of life.

crabtrees kittle house

When I recently popped into his kitchen, Lippin and I were meeting about Eating for Orange, a campaign I ran in collaboration with Food Bank for Westchester for Hunger Action Month in September. The story quickly grew, and they’ll be an upcoming Restaurant Hunter episode devoted to the campaign. (More on that later!)

After the production crew left, Lippin and I sat down to discuss all his amazing efforts, and how this conversation fits in to the bigger question of where the farmer-restaurant relationship stands now, and how it will evolve over the next few years.

If you’re a lover of local, find yourself dining out a restaurants often, or get your own goodies delivered from a farm share, take a listen and learn how you can join the conversation.
